At the roastery we’ve recently started to explore more coffees from Brazil. This one here comes from a farm called Pico Agudo. With a slightly lower elevation of 1,000-1,375 meters this coffee offers a more rustic cup. Think nutty, bready, and cocoa flavors with just enough fruit to make it interesting. Being a pulped-natural coffee you can expect a clean cup with a fair amount of sweetness. Expect to see more coffees from this family farm in the coming months!
Process – Our approach to sourcing coffee beans is to work with importers who have similar values and who specialize in specific coffee regions. We strive to purchase coffees when they are in season and fresh. Really dialing in a roast comes down to very precise moments. It’s quite wild how much we’re able to shift flavors through very minuscule adjustments in the roasting process.
