SANTOS PEREZ
Taste: Apricot, Shortcake, Caramel Sauce
Origin: Guatemala
Region: Chanjón
Process: Washed
Variety: Caturra, Pache
Guatemalan coffees are commonplace in our roastery, and for good reason. We love these beans for their characteristic origin flavors, as well as the ways those tones shift from farm to farm. Santos Perez Ramirez is a leading member of the ASDEFLOR group, a collective of indigenous farmers who work collaboratively to further sustainability for the local farmers and their crop. His share contains both Caturra and Pache varietals and comes to us from his farm in Chanjón, Huehuetenango.
In the cup we are getting rich sugar tones like caramel sauce, angel food cake, and fresh apricot in the acidity. While there is certainly the expected Guatemalan flavor of chocolate throughout, this origin is rich without becoming heavy. We find this coffee to excel as a comforting daily brew to ward off the cold, or brewed strongly and served with your favorite dessert.
