LOS GUACHAROS
Taste: Plum, White Grape, Hibiscus Jelly
Origin: Colombia
Region: Huila
Process: Washed
Variety: Caturra, Bourbon, Variedad Colombia
This coffee gets its name from the Los Guacharos group, a collective of independent small-scale producers in the southern part of the Huila growing region. These growers put special emphasis on sustainable farming practices and they have implemented many unique approaches that minimize chemical usage and increase soil health. Shares from five different producers make up this regional blend which consists primarily of caturra, variedad colombia, and a touch of pink bourbon.
Los Guacharos has been a long time favorite of nearly all who try it. This origin really showcases the range of flavors that can come from the humble coffee shrub. Each year that we source Guacharos it is a little bit different, but we are consistently stunned by its vibrant fruit character. This season, guacharos is displaying nuanced fruit flavors like harvest plum, hibiscus jelly and white grape juice. Where our previous season of guacharos was playful, this rendition is elegant. We are loving this coffee as a pourover where its nuance is most highlighted, though every brew method shows us something new.
