Throughout our time sourcing Colombian coffees, we have been consistently impressed by the variety of unique flavors to be discovered from this country. Coming to us from Aponte, Nariño, this mix of Caturra and Variedad Colombia has been a treat to explore and taste. Aponte’s location on a seismic fault (and the infrastructural complications involved in such a location) has led to the popularization of the honey process in an effort to use less precious water. 

In the cup, we are tasting a sweetly unified structure that reminds us of classic sugar cookies, almond extract, and ripe tangerine. The tone of sweetness is creamy and soft, perfectly suited to all kinds of brews though we have a preference for the aeropress with this one. This origin shines a light on the transformative effects of processing and the ways that environmental factors can pave the way to truly unique coffee.
